Valentin Zusslin, a winery located in Orschwihr, in the eastern part of France near the Swiss and German borders, has a rich history dating back to 1691. For 13 generations, the Zusslin family has been dedicated to producing high-quality terroir wines, highlighting the slopes of Bollenberg, Clos Liebenberg, the family’s Monopole, and the Grand Cru Pfingstberg.
In 1997, the entire winery transitioned to biodynamic farming, emphasizing sustainability, biodiversity development, and creating a virtuous cycle in their vineyards and orchards. The winery collaborates with local farmers for compost, maintains beehives, and birdhouses. In 2020, agroforestry was introduced on new plots.
At Domaine Valentin Zusslin, grapes are hand-picked to ensure sorting and selection of the best and healthiest ones. They are brought to the cellar in small cases to prevent compaction and trituration. Gentle pneumatic pressing is employed to obtain high-quality musts. Spontaneous fermentation occurs with wild yeasts already present on the grapes, avoiding the use of selected yeasts or oenological products.
Each terroir is vinified separately, aged on fine lees in large wooden vats, and blended if necessary. The wines undergo a natural process without interference, with minimal sulfur added if needed. Some wines are aged for over 20 years before limited quantities are released.
