Sicera is a cider and Calvados producer with a rich family history dating back to the second half of the 19th century. Guillaume Caillouel and his son Florentin were pioneers in apple, cider, and Calvados production. In 1886, they selected a specific apple variety, appropriately named Caillouel apple, which became a successful and widely distributed product in Normandy and Paris.
In 2014, Paul Caillouel took over the business with a focus on crafting refined and intricate ciders that blend creativity with traditional methods.
Sicera’s family estate, Amfreville, is situated in Eturqueraye, within the protected designation area for Calvados in Normandy. They cultivate both tall tree orchards and low-growing trees, spanning ten hectares each. The orchards feature 15 varieties of apples across four cider apple categories: bittersharp, sweet, bittersweet, and sharp. Each apple variety contributes its own characteristics to the ciders, such as structure, flavor, sugar content, and freshness.
The orchards benefit from clay-with-flints and silt soils, fostering the growth of numerous apple varieties including the Caillouel apple, rediscovered and revived by Paul in its ancestral orchards, resurrecting a variety that was nearly lost due to low yields and modern production standards.
