Raymond Dupont-Fahn is a fifth-generation winemaker based in Côte de Beaune. With a short but remarkable winemaking career, he has produced outstanding wines from humble appellations like Auxey and Bourgogne. In 2001, at just 21 years old, he took over his family’s five-hectare Domaine in Tailly, Meursault.
A significant vineyard within his Domaine is Mersault le “Dos d’Ane,” acquired by his grandfather in 1975. Originally, the soil was deemed too shallow for proper planting, so he obtained permission from the INAO to add an additional 20cm of topsoil, resulting in a scandal among local growers who had it declassified to Bourgogne blanc. Nevertheless, the 27-year-old vines now run deep below the rocks of Les Dos d’Ane, benefitting from the climate of “Les Perrières.”
Raymond follows sustainable practices, abstaining from pesticides and chaptalization. His winemaking choices emphasize wines with greater acidity and less alcohol, often harvesting early. The élévage for his wines involves 20% new oak and barrels under three years old.
