Domaine Servin

Domaine Servin is a renowned winery in Chablis with a rich history dating back to the 16th century when the Servin family was recognized as vineyard owners. Over the generations, the family’s expertise in vineyard work, cooperage, and winemaking has evolved, leading to the creation of exceptional Chablis wines.

François Servin, alongside his Australian associate Mark Cameron, leads the operations of this esteemed estate, which owns four Grand Crus and six Premier Crus, along with well-situated village parcels. While valuing tradition, François has also embraced innovation, reintroducing hand harvesting, planting uncloned Chardonnay at higher densities, and exploring unfiltered bottlings. Domaine Servin’s dedication to excellence has placed them at the forefront of Chablis, capturing the attention of wine critics and enthusiasts alike.

Situated within the boundaries of the village of Chablis, Domaine Servin’s 36 hectares of vineyards are exclusively planted on Kimmeridgian limestone soils, known for imparting a distinct minerality to the wines. The vineyards, many of which are over 40 years old, boast non-cloned Chardonnay plants with different rootstocks, resulting in a unique Chablis style characterized by concentrated flavors and intense aromas.

Domaine Servin employs a meticulous blend of traditional and modern winemaking techniques. Hand harvesting of the finest vineyards and individual parcel vinification are part of their commitment to respecting the identity and authenticity of the terroir.
So riveting is his reputation that one author on Austrian wine who was prompted to list the 100 greatest producers in Austria, in order of greatness, lists F.X. Pichler as #1. When you taste the wines, you’ll see why they impress all. They are truly monumental dry white wines – each with a mouth-filling presence, finish and complexity that leaves one speechless.

Since the late ’90s the winemaking has been done by his son, Lucas, who has now assumed the reins. Riesling Smaragd Loibnerberg is the quintessence of rich, exotic multi-layered Riesling. His Grüner Smaragd Kellerberg and Grüner “M” are the most rich and complex expression of this unique varietal one can attain.
