Caveau de Bacchus, father & son Lucien and Vincent Aviet, make traditional and artisan (only indigenous yeasts) Trousseau and Poulsard from the heart of Jura’s best region for red wine – Montigny.
In 1960, Lucian Aviet, now known to everyone who loves Jura reds as “Bacchus”, established the domaine. He remains very involved, but the reigns are gradually being assumed by his son, Vincent. Comprised of just 6ha total the vineyards are tended “Traditionalist” or “Lutte Raisonnée”.
The production is entirely hand-harvested and all grapes are de-stemmed. Spontaneous fermentations occurs in large, well-maintained old Alsace Foudres. Bottles have always been sealed with wax. “Cuvée des Docteurs” is named for the medical students who came to help Lucien with the harvest for the first few years, “Cuvée des Geologues” is named in honor of the geologists who at the start helped him choose where to plant the most appropriate varieties on respectively optimal parcels.
