The Domaine de la Chapelle, a 7.65-hectare historic vineyard in the hamlet of Pouilly, is a renowned producer of premium Burgundy wines such as Pouilly-Fuissé, Saint-Véran, Mâcon-Solutré-Pouilly, and Crémant de Bourgogne. Managed by Catherine and Pascal Rollet since 1981, the vineyard boasts vines that are over half a century old and are situated on the hillside, imparting unique characteristics to their grapes.
Pascal Rollet, a self-taught vintner, took charge of the estate with no prior knowledge of viticulture. He quickly grew fascinated by the rich qualitative potential of the Mâconnais region, particularly that of Domaine de la Chapelle, one of the oldest appellations in Pouilly-Fuissé. The vineyard was registered in 1904 and fully acquired by Rollet in 2005.
The vineyard’s beneficial microclimate and marly clay-limestone soil, combined with the age of the vines (average 60 years), allow the Chardonnay grape variety to express itself fully, yielding highly concentrated grapes suitable for superior vintages. The vineyard also practices environmentally responsible viticulture, using organic fertilizers, natural pest control methods, and hand harvesting.
The vinification process respects both tradition and modernity, marrying manual techniques with controlled oxygenation, temperature management, and nitrogen inerting for wine quality assurance.
